A cup (or so) of frozen blueberries.
One can of coconut milk.
Half a cup of cold water.
2 Tbsp. cooking oil (NOT olive, okay? Ew.)
1/4-ish c. sugar (or perhaps honey? Somebody try honey and let us know how it works!)
Dump all this into your blender. Fill it almot to the top with ice. Blend for two full minutes.
Goes great with lunch! (And look, Melissa, it's kinda healthy... And Amy, I didn't use the "t" word!)

Honey works fine. I use flax seed oil instead of olive, and add in a black banana- then you can cut the honey way back.
I also through in rice protein powder when I really do want healthy or it is a while till we eat again.

Just be sure to warn him about the coconut flavor *before* he takes a sip. I didn't do that the last time I made something like this, and Smidge just about up and left us over it. I think when you're expecting one flavor and you get another, and look up to see your mother staring at you expectantly, you begin to suspect it was a trick. At least that seems to be the conclusion mine come to.

What a coincidence -- this is what I gave my kids for breakfast this morning. Except I dumped in some vanilla yogurt to give it more oomph. And I ground up the flaxseeds instead of using oil. And I used some orange juice instead of water. And a banana instead of sugar. And no ice, since it would burn out the blender motor.
Okay, the coconut milk and the blueberries in the blender were the same, so I'm still feeling the homeschool-mom-solidarity here.
Protein powder? Does it have a strong flavor? I didn't know such a thing existed, but that sounds like a great way to get some protein into my impossible little "chocolatarian."
LOL, Gail, you're definitely a solid core Mom - and that goes WAY beyond the coconut milk, eh? ;-) That sounds a lot like our breakfast smoothies. :-) Yogurt, oj, banana, milk, whatever other fruit, and ice (never thought about killing my blender - I hope it can handle all this ice...) It's good to *see* you here.
