What'cha cookin'?

What did y'all fix for supper tonight? We're slummin' it tonight - it's some kind of green chile stew-ish mixture. Not sure what to call it. Somehow, "oops, we don't have diced tomatoes, think this enchilada sauce will work?" doesn't quite have the panache (with or without the accent marks) that it needs. What's Spanish for "goulash", anyway? Smells delicious, though, and it'll be great w/ shredded cheese and warm tortillas. Everything is great with shredded cheese and warm tortillas.

Oh, I had the most bizarre conversation with a lady today. In her defense, maybe she's new. Or senile. Whatever it was, something wasn't quite connecting and I don't think it can be blamed on my heavy Southwestern accent. ;-)

I looked up retailers for Ener-G foods, hoping to find somewhere a tad closer than the current 40-mile one-way drive for a loaf of bread. Ooo, goody! There's one in Hartselle, just down the road a ways.

So I called, explained that I'd found their number listed as a place to purchase Ener-G brand products and asked which breads they carry. This is, by the way, the point at which I lost the poor woman - she never did get beyond this part of the conversation - but I wasn't aware that this was such a large obstacle, so I kept going, thus compounding the situation and pretty much guaranteeing that I will never get a loaf of bread in Hartselle.

We did establish that they do not have a single Ener-G product in the store, of that much, I am sure. Mostly. The conversation after the introduction went pretty much like this:

NOL (Nice Old Lady): Well, what are you looking for?
Me: Wheat-free breads.
NOL: What's the name of it? E what?
Me: Ener-G. But do you carry any wheat free breads? (you know, considering we've already established that you do not have their stuff there)
NOL: Um, we have macarrons. They're (reading the label) wheat free, gluten free, egg free, dye free, dairy free, soy free, and nut free.
Me: Great. So you do carry other wheat free products, or just, um macaroons?
NOL: Maybe. I'll have to look. Now what kind of products did you want?
Me: Um, bread. Wheat-free Bread. Any brand. I don't care.
NOL: We have pizza crust. (Again, reading the label.) It's made with stone-ground, organic, whole grain flour.
Me: No, that won't work. Unless it specifies another type of flour, like rice or something else, it's going to be wheat.
NOL: We have Ezekiel bread.
Me: (perking up considerably, thinking she's maneuvering into the right plane) Oh, yes, I'm familiar with that, but it does have spelt and we can't do spelt. So, is that the only bread you carry, then?
NOL: Did you want carrots?
Me: *blink* (oookayyyy... now you've lost me)
NOL: ...I mean, do you want produce? We have carrots. We have organic produce and locally grown produce.
Me: Did you say "carrots"?
NOL: Oh! You're looking for carrots? Yes, we do have carrots. Thank you.
Me: DON'T HANG UP!
NOL: Oh, did you need something else?
Me: *sigh* No. Thank you. Have a nice day.
NOL: You, too, sweetie.

There was a part in there where she offered to call her suppliers, but I never did ascertain whether it was the produce suppliers or the dry goods suppliers, or if she was even sure what she was calling them for. Whatever it was, she said that if she can get it, she'll order it for me if I order by the case. Ahhh, yes, bulk mystery foods. It's the adventurous way to buy! So, essentially, she was very, very nice. Not one bit of help, but very friendly about it.

We still don't have any John bread. Fortunately, the store in Huntsville is a Seventh Day Adventist-owned company, so they'll be open tomorrow and we can get our stuff in the morning.

I'm gonna go warm some tortillas and call in the boys (I cannot believe they have been outside, in the dark, playing - for the last two hours!! They are so going to pass out tonight! Muuahhhaahaaahhaaa!)

At The End of The Day

It's nearly nine, and I think we will all be out by nine-thirty. Smidge has been asleep since just before our company turned off the driveway onto the main road. Zorak is asleep on the couch between the boys. He has a cup of coffee in his hand. It's full. Fortunately, it's no longer hot. I tried to get it from him, but he has an iron grip. So I tried to wake him and explain the situation - you are sound asleep on the couch with a full cup of coffee upright in your hands. Without waking, he mumbled, "pretty amazing, isn't it?" But he didn't let go of the cup. The boys are hanging on only to play one round each of the Lord of the Beans Game and then they're off to bed. And I... in about twenty minutes, I'm going to curse not getting a bigger fridge as I try to stuff leftovers into every nook and cranny I can find. But other than that, I plan to put the food away, let the puppy out, stoke the fire and collapse into a deep, richly earned comatose state.

OK, I lied. It's now nine thirty, and while the dishes have been cleared, the fridge stocked, the kitchen tidied, the dog put to bed, and the fire stoked, I'm no longer tired. Go figure. Zorak finally migrated to bed, and he stoked the fire for me before he retired. Yay him. Now he's warming my side of the bed (a serious benefit of marriage, provided I can move him over in order to enjoy it when I head to bed, myself).

James is out cold. He feels better, but sounds disturbingly like Darth Vader when he breathes. I left a light on so it won't scare Smidge if he wakes.

Balto kept escaping his box (new trick, that didn't take long) to go sleep under John's bed, and John is thinking of ways to get me to allow Balto to sleep under his bed. (There is one way, and one way only - the dog must know that we do not run an indoor/outdoor restroom facility. Period. Until then, he sleeps where he must alert me when he's gotta go. Still, I do admire John's tenacity.) After retrieving the dog from under John's bed for the third time (yes, it was as humorous an image as you think, and yes, I got stuck more than once), I moved the dog's bed into the boys' room. That seems to have mollified his desire to be with the rest of the pups, per se. Either that, or the dog has decided the direct route will not work with me and has agreed simply to pretend he'll sleep in his bed - just long enough for me to leave the room, anyway. That'll work.

We had so much fun preparing food today. We learned that the convection feature on the electric oven ROCKS. It cooked an 18# turkey in an hour and a half at 350. I checked on it when I added something to the oven and, well, the thing looked done. Not "coming along nicely", but "done, ready to eat". The popup thingy had popped, too (not that those are accurate, but I was surprised). I told Zorak that it looked done. He said there's no way it's done. We had a weird exchange:

I poked it - clear juices (and copious amounts of them, too) flowed from the fully cooked turkey. "It's done. The juices run clear."

He comes into the kitchen, smirking. "Where did you poke it?" Zorak asks.

"Shyah, alright Mr. SmartyChef, you poke it and see for yourself."

He pokes it. Then he pokes it in several other spots.

Pause for dramatic effect.

"You are so weird," he says. "It's done. Take it out."

Well, anyhow, that threw off our entire plan. We have never had so much going on in the kitchen at one time. Normally it takes six to eight hours to get everything baked, fried, and steamed. Not today. Although it did take us forever to get done, that was more due to our lack of preparation and not having any countertops yet. It is a neat sensation, though, when it dawns on you that you can put the whole turkey in the small oven to keep it warm. And the dressing, too. At one point, the big oven held two large pans of dressing and three pies. Ok, that's not something you can do everyday. Ohhhhh, wait, yes, we can!! Cool! We just have to get used to it, now, and learn to plan cooking days more efficiently. But how totally fun.

We made the turkey and dressing (wheat-free and absolutely delicious dressing, even for wheat-eaters - all the bread products and pastries were wheat free and they turned out wonderfully), sweet potato casserole, mashed potatoes, giblet gravy, ambrosia, cranberry sauce, corn, green beans, cornbread, biscuits, pumpkin pies and pecan pies. The pies got a tad overdone due to our inability to learn from our mistakes (yeah, if it'll do that honkin' bird in an hour and a half, the pies aren't going to need anywhere near the recommended time... remember that next time, Dy.) Still, it was all edible and I don't think anybody went hungry. So, that's good.

The boys have declared this The Best Christmas Ever. Zorak and I agree. We had a lovely, quiet morning with our children and their joy. We enjoyed the many blessings we have in the forms of health, friendship, love, laughter, understanding and security. I have to tell you about my wonderful Christmas gift, but would like to include a photo of it, so that'll have to wait until tomorrow. It makes me teary-eyed, though, and it's beautiful. Best of all, the boys made it themselves. It's awesome.

The Household Quandry: Getting It All Done in the Kitchen

It seems that as spring blossoms fade and the green of summer pervades the air around us, we begin turning to the fall, to the future. The impending transition from one school year to another starts to bud; the "how do you do it" themes begin to bloom. Some people find these cycles tiresome, but I think they're great. They offer all of us a chance to look around and see if we've found anything worth sharing, or if there's anything we might like to keep an eye out for to help us make improvements. It's a mentorship free-for-all - at it's loudest, most chaotic, and finest, in some respects. I grew up with no idea how to do much of what is now part of my daily existence, so I'm thankful for the ladies who've said, in essence, "Spray a little windex on it." More often than not, those little tidbits passed over the back fence, or shared on the front porch (both real and virtual) are priceless and valuable.

There are still many, many (shamefully, m-a-n-y) areas where I can offer only insight into what is guaranteed to blow up in your face. Repeatedly.

But once in a while, when the question has nothing to do with laundry, or mopping, or organizational skills, or debt management, I let out a squeal of delight in feeling like I might have something to offer. It's the feeling of being able to repay that loan your parents never thought they'd see when they lent you the money, of being able to do something for that friend who is always there with a helping hand and a cheerful heart.

*woohoo* I've done this! It's worked! I haven't poisoned/lost/maimed anyone doing this! I might be able to help!

Jules asked about meals, groceries, and menu planning. I was going to just leave her a comment, but instead I'm going to blog about it (because, honestly, it's a lot of fun for me - I love food) and then I'm going to ask y'all to head on over to her spot and do a little brainstorm sharing - since we're kinda weird, and what I'm about to share may be of absolutely no help to her whatsoever. Here's my not-quite-up-to-Proverbs-31-quality-plan-of-meal-preparation...

I've tried to do the menu thing, tried the planned-shopping-excursion thing... they fail miserably b/c I have A) little self-discipline, B) moods for foods (and I get cranky if there's something else planned that I feel compelled to make - ew), C) we like to experiment, but how can you plan experiments (I mean, you can... but where's the fun in that?)

So, this may be absolutely NO HELP at all, and might be a great model of what not to do, but it works for us.

I make a list of the basics that I know we'll enjoy and buy those at the store (chicken, for example). Then I have the rest of the week to dig through the cookbooks for just the right way to fix said items (bbq, fried, baked, stewed, casserole... mmmm). This method basically saves me the dreaded all-in-one chunk o' time trying to figure out on Saturday what we'll be in the mood for on, say, Thursday. I have three small children. There are no large chunks o' time in my week to waste on futility.

My weekly grocery list looks pretty much like this:
Meat
Veggies
Fruit
Creamer
Pasta (both wheat-free and regular)
Bread (again, wf and regular)
Eggs
Milk

Yes, it's vague. It's meant to be. This is the beauty of my insanity: I have the flexibility to decide on pork ribs or pork loins, depending on the sales (and mood). Yet the list keeps me out of the aisles of budgetary destruction. They are like little blinders to help guide me to the checkout aisle in one piece.

About once a month I stock up on crackers, rice, potatoes, canned meats, sauces, and the occasional treat. But this is the basics. Each item has its own caveat that I don't write down anymore, but used to. Now that I'm familiar enough with the meal-planning thing, I don't have to leave notes to myself not to buy the salmon unless it's less than xx dollars, or that it's time to stock up on whole chickens and tighten the budget belt for a bit. But those do help - don't be afraid to put notes on your list! If Zorak requests something I don't normally buy (or something I didn't even know markets carry) he'll put parameters in the sidebar ("sardines if < $2.50/can")

Then meal-making is easy. Particularly supper - just pull out the main dish and brainstorm from among the fresh goodies what sounds good. If I can't think of anything, I'll ask the boys. Sometimes they will request a certain side-dish (like yams) that needs a certain main dish (wouldn't go well w/ goulash, for instance) and it's easy to work that direction, too.

We keep the price down by working with the market fluxuations. Before everyone knew how to fix fajitas, the meat used in fajitas was dirt. cheap. Sometimes people confuse that with poor. quality. This isn't always the case. That same meat now costs about four times what it used to, because there's a high demand for it. It's worth it to learn a little bit about judging meat - you can save money by purchasing the less popular cuts and giving them a little TLC to create a splendid product!

When we had to go wheat-free, I had a shocking realization that we blew a lot of money on snack foods without realizing it. Cheez-its, nutri-grain bars, teddy grahams. Things I would have put in the "normal expenditure" category are now in the, "yeah, that's not in the budget" category. I've found the wheat-free counterparts for nearly everything, but they're no longer so easy to slip under the budget radar. (It's easier to justify two dollars for a quick snack; not so much when it's six dollars for the wf equivalent!) I've learned to make our foods work for us, and they have to earn their keep. It's been a good change, not just for the children's health, but ironically, for our budget, as well. If you're looking to cut the grocery bill, look at the little buck-fifty items that sneak in and add up quickly.

We use rice, potatoes and pasta a lot! You can add veggies, spices, sauces, and meats to all three of these things to create attractive, nutritious, inexpensive meals.

When we do snack, it's intentional. Now that we don't have a lot of the grab-n-go snacks in the cupboard, having a snack is a time for the boys and I to sit at the table and spend time together. So we prepare for it. Sometimes we'll chop veggies, make little cups of dip (salad dressings, bbq sauce, etc) and just enjoy that. Some of the boys' favorite snacks: crackers and peanut butter, ants on a log, popcorn, sliced fruit with nut butter, yogurt with granola, toast and jam. We spend less and eat better without the walk-by-snacking we did before.

For the days I don't feel like cooking? Well, I must admit... um, I just tell Zorak that I was thinking we'd have pasta for supper. There's a slight pause while he waits for me to tell him what we'll have with the pasta (for him, it's a side-dish, not a meal) and when I don't say anything, he'll offer to cook. I try not to abuse this little technique, but there are days that noodles are about all I can muster the energy for. And then, there are leftovers. Leftovers are great things.

This is already huge and rambling, so I'm going to stop now and will post some favorite meals later. For now, though, I'd better get to bed or the boys will find themselves scrounging in the fruit crisper for breakfast!

And a good morning to all!

I stayed up far too late last night working on the blog. *yawn* Still don't have it quite right, but that's ok. I don't have my home anywhere near ready for company either. As I've said before, if you're coming to see us, you're welcome anytime. If you're coming to see the place, you'll have to make an appointment.

We have a cookie making playdate with Melissa in MD and her two daughters today. I'm excited about it. Didn't get to play with recipes over the weekend as I'd hoped, but I'm hoping something we make will turn out well. (Wheat-free, dairy free cookies- suggestions, anyone?) John is wearing his bat-suit in honor of the occasion- I'm sure the girls will be thrilled to know that. :-)

Zorak is back at work. These three-day weekends are killing us. We get accustomed to snuggling in a little deeper in the mornings, and then *wham* come Monday he has to extricate himself from the snuggle spot WAY too early. Still, it's a wonderful thing to be able to complain about.

Oooh, hey, isn't Christmas this week? Wow. That went fast. Guess I ought to get my cards out, huh? And go buy wrapping paper. Probably should hang stockings, too. Ah, well, here's an irony for you. I've always said Zorak is the Grinch, but it looks like I've been a bit of a slacker myself this year. *sigh* I'm glad the kids are too young to be scarred by my inability to get organized amidst the moves. Next year will be good.

Oh! Yes. That's another goal- we are paying down our debts and will be buying a home in November, when our lease expires. I'm so excited. We've put a financial plan down to pay down the debts. Zorak is going to call the student loan people to make his payment arrangements (we go into repayment in April, but would like to see if we can adjust the payment according to his income). We've set up a savings plan and now it's just a matter of sitting back and DOING IT. (That would probably be the tricky part, eh?) However, as an archer needs a target at which to aim, so we need clear goals in order to attain them. So that's this year's big goal- purchase a home.

ARGH- John has had way too much wheat over the weekend. He's whiney and debilitated and completely incapable of doing anything for himself this morning. *aigh*
"Honey, eat your breakfast."
(tears bubble to the edges of his eyes) *But HOW? How do I eat?*
"John, you know how to eat."
*(actually crying) I don't know HOOOOWWWWWWWWWWW."

I wonder if Melissa will accept the pre-apology Jess and I instituted? We just apologized pre-emptively for anything our children would do in the future. It's worked wonders for us. Hee hee.

OK, so I'm off to wrangle the whinester and get more food for the bottomless pit that is my oldest. Have a wonderful Monday, all! I'll be back this evening to add all my favorite people whose blogs are available. ;-)
